Ever bought the Knorr pasta or rice sides for a quick and cheap side dish for your dinner?

Knorr sides can be used for more than an easy and tasty meal accompaniment. These little, inexpensive packets can actually be turned into a delicious entrée.

The Knorr packets consist of flavored pasta & rice, that include: Alfredo Pasta, Alfredo Broccoli Pasta, Cheddar Broccoli Pasta, Stroganoff, Chicken and Broccoli Pasta, Mushroom Rice and Pasta, Chicken Fried Rice, Spanish Rice, Chicken Rice and Pasta, etc.

Choose a packet, add a couple extra ingredients and tada! A quick, easy, flavorful and affordable meal.


Knorr Creamy Chicken Alfredo

The recipe I followed is for Creamy Shrimp Alfredo but my boyfriend does not care for seafood so I substituted chicken for shrimp.

Ingredients (makes up to 4 servings):

  • 1 package of Knorr Alfredo Broccoli Pasta Sides
  • 1/2 cup to 1 cup of Grape Tomatoes, halved
  • 2 cups of Baby Spinach Leaves
  • 1 Tbsp butter
  • Weber Roasted Garlic & Herb Seasoning (optional), or your choice of chicken seasoning and amount used
  • Thin sliced boneless, skinless chicken breasts (I used 3 pieces)
  • 1-2 Tbsp of Grated Parmesan Cheese
  • Additional spices I used for extra flavor: garlic powder, Italian spice mix, salt & pepper (optional)

Directions:

  1. Season chicken to your liking and add butter to medium skillet. Cook chicken in skillet on medium-high heat for about 5 minutes per side or until no longer pink.
  2. Meanwhile, prepare Knorr Alfredo Broccoli Pasta Sides according to package.
  3. Mix in tomato halves, baby spinach and additional spices (if you desire) to pasta sides during the last 5 minutes of cook time.
  4. Cut chicken into strips and place atop pasta. Sprinkle with grated parmesan cheese.
  5. Bon Appetit!

Super Saving Stuffed Chicken Recipe

Don’t let a tight budget stop you from cooking at home. Frugal can be flavorful.

Here’s a recipe that’ll tantalize the tastebuds and keep the wallet fat:

Mozzarella and Mushroom Stuffed Chicken with Baked Parmesan Tomatoes and Steamed Broccoli

Ingredients (2 Servings):

  • 2 Boneless Skinless Chicken Breasts
  • 1 lb. Fresh Broccoli
  • 2 Tomatoes
  • Mozzarella Cheese (fresh or shredded)
  • 1 4 oz. Can of Mushrooms
  • Grated Parmesan Cheese
  • Spices for Chicken
  • Mix of Italian Spices or just Oregano for Tomatoes

Directions:

  1. Pre-heat oven to 365º.
  2. Prepare chicken by slicing breast to form a pocket. Slice the chicken like you would if you were going to butterfly the breast but not cutting all the way through. Then add spices to chicken. I use a roasted garlic and herb poultry seasoning.
  3. I like to sauté my mushrooms in a pan with a little minced garlic and butter before adding to the chicken but if not, stuff the chicken with mozzarella cheese and mushroom pieces. I used up some shredded mozzarella I had in the fridge but fresh mozzarella will work too.
  4. Bake the chicken for about 25-30 minutes or until no longer pink.
  5. While chicken is cooking prepare tomatoes by cutting in halves. Top them off with a drizzle of olive oil, a little salt, pepper, oregano or mix of Italian spices, and grated parmesan cheese.
  6. Place halves on a baking sheet and pop them in the oven for about 15 minutes.
  7. While those are both cooking, start steaming your broccoli in a pot with water, salt, pepper, and I like to add a little minced garlic for flavor. Once boiling, place lid on pot. They should be done in about 7 minutes or until florets are just soft enough to pierce with a fork.
  8. Plate and Enjoy!

Dinner for two only cost me $10! Can’t go wrong for $5 per person for a tasty meal.

Don’t Do Delivery, Save Money and Bake a Pizza at Home

Pizza is always a quick and easy go to when you have had a busy day and it is that one meal the whole family will agree with. Delivering pizza or even picking up a pie can rack up the dollar bills though. You get charged a delivery fee and have to tip on top of the pizza price. Now, I know we choose to order pizza because we don’t feel like cooking ourselves but baking a pizza at home is simple, inexpensive, and is a fun activity for children, if you have any.

Here’s my dough saving pizza recipe:

What You’ll Need:

1 bag of fresh pizza dough ($0.88)

1 jar of pizza sauce, 14 oz. ($1.48)

1 bag of shredded mozzarella cheese, 8 oz. ($2.48)

Choice of toppings

Baking sheet or pizza stone/pan

Directions:

Pre-heat oven to 450°

Roll out pizza dough ball into a flat circle on choice of pan so it forms the shape of a 10″ pizza. Sprinkling flour on the dough and on your hands will make this process easier.

Knead your fist around the outer edge of the pizza, forming a little crust.

Spread a layer of pizza sauce onto the dough. How much is up to your preference.

Sprinkle shredded mozzarella over the sauce.

Now add your toppings. I used diced jalapenos and turkey pepperoni.

For an extra touch, I like to add more flavor by brushing a little butter along the crust of the pie then dusting it with some rosemary spice and garlic powder. Adding other spices like oregano or basil over the cheese and toppings enchances the pizza too.

Pop it in the oven for about 18-20 min. or until crust is golden brown.

Cut it up and enjoy!
